In a recipe that does NOT use pectin, Honey can replace up to 1/2 of the sugar. In a recipe with pectin you can replace with 2 cups Honey for 2 cups sugar.
This is discussed on page 28 of the Ball Blue Book, which you really need to have if you want to do any home canning.
