An mexican pickled vegetables recipe I wanted to make (see link below) said to simmer the vegetables in hot vinegar for 10 minutes prior to packing then
processing for another 10 minutes in a hot bath. I don't want to overcook the vegetables. Could I simply pack the vegetables, fill the jars with hot
vinegar (190 degrees plus) then water bath for 10 minutes?
