Hello everyone!

I am looking for a recipe for star fruit jam or marmalade or jelly.i have a tree ,and this year all the fruit ripened at once.
i made marmalade 4 times before .only one time it set a little.the taste of the marmalade is so good,that my family is begging for it and they don't care it is so thin.
i followed every recipe to the letter and nothing works.
it's so much work to make the stuff and then it runs like juice.
i made some blackberry marmalade about 20 years ago and it came out perfect first try.
i hope someone can help me.

Pickled carambola

I know carambola and star fruit are the same thing, so found this recipe.
Will look for a jam recipe, too.
PICKLED CARAMBOLA STARS

3 cup Carambola, sliced (remove seeds)
2 Tbsp. salt
1 Qt. water
Mix salt and quart of water in large container with lid. Place sliced carambola in salt water and soak overnight. Next day, drain, rinse and drain again. Cover with cold water, bring to a boil, turn heat down and boil for 10 minutes.
1 cup white vinegar
cup water
3 cup sugar
tsp. whole cloves
1 3" piece stick cinnamon
1 small lime, sliced thin
Make a syrup with white vinegar, water, sugar, whole cloves, stick cinnamon and lime slices. Combine all ingredients and cook over medium heat for 10 minutes.

Drain carambola and add to syrup, over high heat bring to a boil. Turn heat down and cook for 10 to 20 minutes, depending on firmness of the fruit.

Pack in jars and process in boiling water for 10 minutes. Makes 1 pint.

Yes Lucy ,you are correct!
star fruit and carambola are the same fruit some people even call them star apples (me).
i will definitely try your recipe for pickled carambola,it sounds good.
i made a batch of Jelly today and i added a quarter of papaya to it. i make a lot of fruit drinks with papaya and i noticed when i put it in the fridge for a while it is solid.
so i thought i am gonna try it with the carambola jelly and maybe i'll get lucky!

Don't have a clue about "starfruit".....but.....some of the
"strange to me" recipes that I have tried that call for the
liquid pectin, I have had nightmares with. I gave up and
tried the same recipes with the powdered pectin, but
boiled it for an additional minute and have had good
results. I do this with the Cranberry/Jalapeno jelly, now.

If all else fails, try it with a batch.

I don't like liquid pectin, either. Besides, it costs too much. I hear a lot of people say they don't like the liquid because it doesn't gel for them. I have been using Pomona's pectin since it seems to gel anything. It takes getting used to and the jelly isn't as clear looking, but it all tastes really good.
Star fruit is sort of tart, citrus kind of thing if you haven't had them. They are pretty on a fruit tray.

thanks for all the great tips.!
i was thinking about doing just that.the only problem i am having is,most stores in my area don't carry the powder pectin.we live in miami! maybe they just want us to buy the expensive stuff.
i made another batch yesterday and its the same thing they say it takes about 24 hours to set.the longer it sets,the thinner it gets. i tried to make it without any pectin, only sugar and fruit and boiled it for at least 30 minutes and it actually set,but a lot of it boiled away.i have a book with all tropical fruit recipes and they suggest even fruit juice and sugar with some lemon juice .
the person with the right tip wins a free 6 oz jelly .shipping included.i know its not much but when you taste the Jelly you will absolutely love it.

Pomonas pectin

The best pectin I have found is called Pomonas pectin. Most of the time you need to order it online. It will gel any sort of fruit. You can make sugar, low sugar, use artificial sweetners, honey, and stevia with it, too.
Maybe you can order some. I got mine in bulk and it is cheaper that way. It is harder to work with just because it wants to get lumpy, so it says to mix it with your sugar first, then add to the juice.

thanks lucy for you great info on pomona's pectin!
i tried to buy it in my area ,but most people around here don't even know what pectin is.i finally found in publix the jars that i needed to use.i also found some powdered fruit jell.i made a batch and it acually set.i am still i shock ,that i actually have jelly instead of syrup.the fact that i don't need to use little or no sugar with the pomona's pectin is just what i been looking for.looks like you are the winner of a small star fruit jelly shipping included.if you send your e mail and shipping address to me via my e mail i will send it out in a few days.
looks like i'm gonna be real busy for a while making real jelly.i have 2 trees and first the small one all the fruit got ripe at the same time,now the big one decided to do the same. normally i fruit all year a liitle at a time.this year i have a lot all at the same time.

Hi, I am interested in the starfruit jam or marmalade recipes. I hope to be able to plant a starfruit tree or two soon. I have been researching the trees and found out something very interesting.

Starfruit should not be consumed by those with chronic renal failure or end-stage renal disease. Starfriuts contain oxalic acid.

I found this info at www.foodreference.com under Star Fruit Carambola. There is also quite a bit of info at the Purdue Univ. horticulture website.

But are they ever GOOD!!

if your planning on planting a tree or 2,do youself a favor and start with one. they have seveal differnt varieties and i have two different ones.my small tree had so much fruit i could not keep up with giving them away,after eating so many ,that i did not want to look at another fruit.thats why i started making jelly or jam ,mine is probably jamy.i like some pulpin my jelly ,but its not enough to call it jam,i guess. i hope you live in a warm climate.i don't think they do to well in a colder climate.my small tree that i think is about 5 years old now and about 10-12 ft tall give me so much fruit this year that i made so far from one bearing over 30, 6 oz jelly, and a christmas i give about 100 fruits to the neighbors . every day for about 2 month now i make 2 starfruit and banana or papaya shakes.they give fruit 2 times a year wich amount to about all year long ,with little fertilizer.

I am going to try to find 2 different varieties to plant. From my research I've learned some are self polinators others need cross polination. I live in No. Calif at the upper end of the Sacramento Valley (near Redding/Lake Shasta) It gets hot - over 100 in the summers and close to freezing in winter occasionaly. I learned the trees can be covered in winter with blankets or something to prevent freezing. It's worth a try anyway. Then have to figure out how to keep deer, squirrels, raccoons, wild turkeys and all sorts of critters out. I told hubby we ought to build a 10' tall chicken wire fence, covered with chicken wire, all around the orchard area and my garden too. Lotta work tho. Thanks for the info on the starfruit.
