I popped the lid off of a jar of pickles I'd canned months ago (My first time pickling) and discovered that they were great... except I'd totaly left the salt out of the recipe. (I bought it, I just managed to not remember to put it in the brine.) I looked in the pantry and sure enough... there was the brand new salt, unoped on the shelf.
This is probably a silly question, but is it possible to open all the jars, dump all the brine, keep the contents, make new brine and re-process (this time with the salt in)? Seems to me It'd be okay as long as it were processed the correct amount of time. Might make a mushy pickle in the end... Hmm. I know salt is not neccessary for the keeping aspect of the pickles... but dang... they sure fall flat without it.
